Daniel Barnes founded Treaty Oaks Distilling in 2006 in Austin, Texas. He quickly made an impact in the local bar scene and expanded rapidly, delivering a range of Bourbons, Whiskies, and Waterloo Gin. In 2016 they expanded to a new facility on a 28-acre ranch in the small town of Dripping Springs, Texas — about ten miles west of Austin — with new, larger stills and storage rickhouse. In 2018 they became a part of Mahalo Spirits (Angel’s Envy) and RSVP Ventures’ expanding Spirits portfolio.

The first thing that you should know about Treaty Oak Ghost Hill Texas Bourbon is that this is their “home grown” Bourbon — mashed, fermented, distilled, barreled, and aged on site. That mash bill is 57% corn, 32% wheat, and 11% barley. You’ll notice that there is plenty of wheat and no rye in that mix. This should tell you that the flavor profile is closer to a youthful Blanton’s… or maybe Weller’s younger brother. It is aged two years in new #3 char casks. But the extreme weather and temperature swings in the Texas Hill Country age Whiskies faster, and with the 47.5% ABV it tastes more like a flavorful four year-old to our palate.
