Salmagundi is our series of blended farmhouse ales; each woven of different threads, never to be approximated again. Volume 3 is, in fact, essentially oaky. This beer is the culmination of three wildly different, but desparately harmonious threads- all of which average out to be the most time spent in wood for any of our singular multi-threaded blends: Introducing...Taiheke (15 months in oak), Oolong (12 months in oak), and Wabi-Sabi Vol. 2 (8 months in oak). Having the “lightest” beer of the blend act as the most aged, and so on, creates a cascading effect that is bright, balanced, and well-worth of stepping out of our typical ‘house flavor’ for.
